a recipe for pumpkin seed mole
I made one of the wicked-simplest things ever, and it blew my mind. It was inspired by a mole I had in Puebla.
Soak a cup or two of pumpkins seeds for about 8 hours. Drain and toss into a food processor or blender. Add a bit of hot water, salt, and a good glug of nice oil – olive, almond, or avocado. Maybe if you’re feeling randy… splash in some seasoned rice vinegar.
That’s it. Hit the blitz button and mix well. Adjust with more water until it’s a nice consistency. I like mine similar to a basil pesto texture.
